While other cities were building predictable hotel bars with the same cocktail formulas and the same generic city-view setup, Detroit went ahead and restored a century-old skyscraper and put a Barcelona-inspired tapas bar on the 14th floor. It turned a historic department store site into a 300-seat rooftop bar with Michigan spirits and sweeping views of the new downtown.
